Fruit Pie Bars

I'm a sucker for a quick bar that can fulfill my sweet tooth in a pinch.
Some days I just don't want to have to worry about making the dessert look perfect, or shape lots of cookies...then frost them. So these are right up my alley.
Full of flavor.
Easy to put together.
Just enough sweetness to make anyone satisfied.
The best part of these bars is that you could use any fruit filling that you would like and they will come out perfect every time.
Many recipes are similar, but this one comes together with few pantry ingredients. It can also be doubled easily. I like to bake them up in an 8x11 pan, just because I like them a bit thicker, but they would work out perfect in a 9x13 dish as well.



Fruit Pie Bars

1/2 cup butter, softened
1 cup sugar
2 eggs
1/2 teaspoon vanilla
1/2 teaspoon salt
1 1/2 cups flour
1-21oz can pie filling

1/2 cup powdered sugar
1-2 tablespoons powder sugar
Splash of vanilla

Preheat oven to 350 degrees.
In a mixing bowl cream together the butter and sugar until fluffy.
Add the eggs one at a time, beating well after the addition of each one.
Beat in the vanilla and salt.
Add the flour slowly until the batter forms, do not over mix.
Spread 3/4 of the batter over the bottom of greased baking dish.
Pour the pie filling over the top evenly.
Drop spoonfuls of the remaining batter over the filling.
Bake for 20-25 minutes, or until tops are turning golden brown. 
Let cool on a wire rack.
In a small bowl, mix together the powdered sugar, milk and vanilla until desired consistency is reached.
Drizzle over the top.
Cut into bars.
