S'more Bites


This is the face of pure enjoyment.
The face of my daughter after her first S'more Bite.
Yes, it was that tasty.

Yet another Pampered Chef recipe, I had tried these a while ago at a party and forgot about them until I came across a pin for them on Pinterest of someone else remembering the recipe as well. (Her's look divine...mine were rushed to have done in time for dessert and well, because I was drooling over the photos and wanted to eat them ASAP.)
These are perfect when craving a s'more in the middle of winter.
I decided after making these, that I am going to make them again soon, but under the marshmallow add some peanut butter instead of chocolate. 
I love Reese's S'mores more than about anything else in the summer. 
It will be great.

S'more Bites
Prep: 20 minutes Bake: 5 minutes Serves: 24 bite-size cups

Preheat oven to 350°

7 whole graham crackers, finely crushed
1/4 cup powdered sugar
6 tablespoons butter, melted
1 bag chocolate chips, divided in half
12 large marshmallows

Combine the crushed graham crackers and the powdered sugar with the melted butter until well moistened. 
A little more butter may be necessary.
Place a tablespoonful into each cavity of a 24 mini cupcake pan.
Press firmly to flatten into the cavities.
Bake in preheated oven for 5 minutes.


Remove from oven, place chocolate chips into the center of each graham cracker cup. 
About 8 or so chips. Use 1/2 of the bag for this :)
Cut each marshmallow in half.
Dip a pair of scissors into a glass of cold water in between the cuts to minimize the stickiness.
Place cut side down over the chips.

Place the tray back into the oven and continue to cook for another 2 minutes or so, or until marshmallows start to puff up.

Let the tray cool for about 15 minutes.
Then remove each S'more Bite from the tray.
I used a spoon to help slide them out.
Move to a cooling rack to let finish cooling.
Place remaining chocolate chips in a bowl and melt in the microwave for 1 1/2 - 2 minutes.
Dip each bite into the chocolate so the marshmallow has a chocolate coating.
Place back on cooling rack, graham cracker crust first.
Let finish cooling.
Enjoy! I love seeing my basset hound in the background just wanting one so badly!
