Peachy Cream Bars


It is almost the end of summer. Which means that fresh peaches will soon be out of season.
Fresh peaches are my favorite to bake with. Pies, tarts, these delicious cream cheese bars...yum!
I found this recipe over at JustAPinch.com and adapted it slightly to use all my fresh peaches that I picked up at the store. These are a nice cool treat, and can be adapted if you don't have fresh peaches, to using canned. You could really use any fruit, it is a simple, versatile recipe. I think this is great for potluck days at work!

Using fresh is my favorite, look at the great color of the fruit when it came out of the oven:


Peachy Cream Bars

1 box dry cake mix (white or yellow)
1/3 butter; room temperature
2 eggs
6 or 7 fresh peaches, peeled and sliced to 1/2 inch thickness OR 29oz canned peaches; drained
8oz cream cheese; room temperature
1/3 cup sugar
1 teaspoon vanilla

Preheat oven to 350°
Spray 9x13 baking dish with cooking spray

Combine cake mix, butter and 1 egg together until crumbly; divide and set aside 1 1/2 cups of the mixture and press the remaining into the bottom of the baking dish.
Bake for 10 minutes.
Place the peaches evenly on the partially baked crust.
In another mixing bowl cream together the cream cheese, sugar, the other egg and vanilla.
Spread evenly over the peaches.
Sprinkle with the reserved crumb mixture.
Bake for another 30 minutes.
Chill 30 minutes before serving.
Store leftovers in the refrigerator.
