Pulled Pork {dry-rubbed}

BBQ is a staple at house. We enjoy eating BBQ when we go out to eat and I seem to always get pulled pork sandwiches.
I have attempted to recreate a pulled pork sandwich at home, but they just never come out right. It seems like every recipe I have tried places the pork in a slow cooker with a bottle of BBQ sauce and call it pulled pork after 8 hours or so.
I am never satisfied with it.
So after watch numerous episodes of Food Paradise, Diners, Drive-ins and Dive, Man v. Food, etc. I realized I hadn't ever tried a dry rub on the pork. Duh me!!
I did some recipe-searching and came up with combination that was delicious! I did cook the pork in the slow cooker because it allows the pork to shred wonderfully.
The rub seems like it packs some heat with all the pepper added, but once the pork is shredded, it mellows out quite a bit and isn't hot.
I picked up some kaiser rolls, served with a side of tater tots, and don't forget to add some jalapenos to your sandwich!


Dry-Rubbed Pulled Pork

2 1/2 lb. pork butt (shoulder)
1 tablespoon brown sugar
1 teaspoon crushed red pepper
1 1/2 teaspoons paprika
1 teaspoon ground cumin
1/2 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon ground mustard
1/4 teaspoon chili powder
1/4 cup cider vinegar
1/2 cup water
1 tablespoom ketchup

Sauce:
1 cup ketchup
1/4 cup brown sugar
2 teaspoon paprika
1 teaspoon chili powder
1 1/2 cups cider vinegar

Combine everything but the pork, vinegar, water, and ketchup in a bowl.
Rub the spice over all sides of the pork.
Place the pork in a slow cooker that has been sprayed with non-stick spray.
In the bowl stir together the cider vinegar, water, and ketchup.
Pour over the pork in the slow cooker.
Cover with lid and set on low for 8 hours.
After 8 hours, remove the lid from the slow cooker, and using tongs and a wooden spoon remove the pork and place onto a serving plate or large bowl.
The pork should shred by itself when you pull it out, I used the spoon to support the pork when removing it from the slow cooker.
In a bowl combine the ingredients for the sauce and pour over the shredded pork.
Serve on large kaiser rolls.
