Peanut Butter Reese's Pieces Cookies


Peanut butter.
Reese's Pieces.
Chocolate chips.
Cookies.
Yum.
I've kind of been on a cookie and a peanut butter kick lately...obvious if you follow my blog regularly.
But I recently made Monster Munch which required the use of Reese's Pieces candies. 
Well I could sit there and eat the rest by the handful. Really I could have, but instead I decided to whip up a batch of cookies that I spotted over at Sweet Pea's Kitchen for these wonderful, thick, moist, delicious cookies! They came out tasting just as good as they look. The recipe calls for instant pudding mix. If you haven't ever baked cookies with pudding mix, you are in for a real treat! The pudding mix adds a real good texture and moistness to the cookies that normally isn't there. I have done it with other cookies, but never peanut butter, and I was really pleased with the results!



Peanut Butter Reese's Pieces Cookies

1/2 cup peanut butter
3/4 cup butter, softened
1/2 cup sugar
1/2 cup packed brown sugar
2 eggs
1 teaspoon vanilla
2 1/4 cup flour
1 teaspoon baking soda
1/2 teaspoon salt
1 package instant vanilla pudding mix (unprepared) 3.4oz size
1 1/2 cups Reese's Pieces candies
1 1/2 cups chocolate chips

Preheat oven to 350°

Cream butters and sugars.
Add vanilla and eggs; mix well.
Combine flour, baking soda, salt and pudding mix in a separate bowl.
Add to the creamed butter mixture; mix until dough forms.
Mix in Reese's Pieces and chocolate chips.
Drop by spoonful (medium cookie scoop) onto ungreased cookie sheets.
Flatten slightly with hand or fingers; if desired.
Bake for 10-12 minutes, or until edges begin to brown slightly.
Remove from the oven and let set on cookie sheet a few minutes before removing to a cooling rack.
