I mean, I have made:
- Gooey Butter Cake
- Rolo Cake Mix Bars
- Cake Mix Rice Krispies
- Chocolate Chip Cookies
- Funfetti Cookies
- Peachy Cream Bars
and that is just the tip of the cake mix iceberg!
I wanted a puffy, melt-in-your-mouth sugar cookie that could stand on it's own without any frosting.
That's when I came across a sugar cookie recipe that starts with a cake mix. Whoa!
I had to try and I am happy that I did!
These don't spread, so however big you make your dough ball before baking is just about how big they will be after baking.
Don't over bake these or else they will not be melt-in-your-mouth delicious.
These would be great with a buttercream frosting for sure! Toss on some sprinkles and you have a perfect party cookie.

Easy Sugar Cookies {cake mix}
Preheat oven to 350°
1-18oz boxed white cake mix (with pudding in the mix)
2/3 cup flour
2 eggs
1 teaspoon vanilla
1/3 cup canola oil
2 tablespoons sour cream
Mix together all the ingredients until dough forms.
Mixture will be stiff.
Roll into balls about 1 inch big.
Place on ungreased baking sheet.
Bake for 10 minutes, until puffy and cracking.
Let set a few minutes on cookie sheet; remove cookies to a cooling rack.
Makes about 30 cookies.
