Pumpkin Bites

And here is a great pumpkin recipe to kick off your fall baking!
Not only does this satisfy my "doughnut extravaganza" that I have vowed to do, but this also fit into the perfect pumpkin recipe category. I have been itching to bust out a can of pumpkin and bake away.
Nothing smells better than anything with pumpkin in it baking in the oven! Nothing...just nothing.
My daughter loves these. The day I made these, she ate seven, yes really seven before I even had a chance to get them off of the cooling racks (after coated in sugar) and onto my cake platter. She calls these "pumpkin balls", which is fitting for what they look like. But "bites" sounds a little better :)
I adapted this recipe from blog Just the Little Things, as I wanted to use a full can of pumpkin, and I only had pumpkin pie spice on hand, but feel free to check out the original and go with whatever works for you!


Pumpkin Bites

1 3/4 cups flour
2 teaspoons baking powder
1/2 teaspoon salt
1 1/2 teaspoons pumpkin pie spice
1/3 cup canola oil
1/2 cup brown sugar
1 egg
1 teaspoon vanilla
1-15oz can pumpkin puree
1/2 cup milk

Coating:
1/2 cup butter; melted
1 cup sugar
2 1/2 tablespoons ground cinnamon

Preheat oven to 350°
Spray a mini muffin tin with non-stick cooking spray.
In a mixing bowl combine flour, baking powder, salt and pumpkin pie spice.
In another bowl combine oil, brown sugar, egg, vanilla and pumpkin puree.
Add flour mixture to the pumpkin mixture slowly, gradually adding the milk alternatively until all is well combined.
Using a cookie scoop drop into the cavities of the muffin tin.
Bake for 10-12 minutes; until toothpick inserted in center of one comes out clean.
Remove to a cooling rack (with waxed paper or foil placed underneath)
Let bites cool; combine sugar and cinnamon in a small bowl.
Dip the bites one at a time into the butter and then roll in the sugar mixture.
Place back on the cooling rack until ready to serve.

*This recipe made about 3 dozen bites.
*They taste good without the sugar cinnamon mixture, but really good with it :)
