Chocolate Chip Pudding Cookies


Where have been with all the chocolate chip cookie recipes? 
I have totally been chocolate chip cookie MIA! 
I've been making them, trust me, my girth would let you know that I have been :( 
But I just keep forgetting to post them! I have about 20 recipes (some are more cookies) just waiting for me to finish typing up to get posted. 
But anywho...if you are needing a chocolate chip cookie fix, this one is simple and has some awesome flavor!
The cookies come out super moist, thanks to the vanilla pudding mix that you mix into the dough.
I have always enjoyed pudding cookies (try adding some butterscotch pudding or a cheesecake pudding).
The great thing about pudding mix added to cookie dough is that it can be added into any recipe that you enjoy. This particular recipe comes out thick, holds it shape well, has a bit of chew to it, and is tasty!


Chocolate Chip Pudding Cookies

3/4 cup butter
3/4 cup brown sugar
1/4 cup granulated sugar
2 eggs
1 tsp vanilla
1 (3.4oz) package pudding mix (I used vanilla)
2 1/4 cups flour
1 tsp baking soda
1/4 tsp salt
2 cups chocolate chips (or butterscotch chips! or a mix of both!!)

Preheat oven 350°

Cream together butter and sugars.
Add eggs, one at a time, blending well.
Stir in vanilla and the dry pudding mix.
Combine flour, baking soda, and salt.
Stir flour into the sugar mixture.
Fold in the chocolate chips.
Drop by the spoonful onto baking sheets and bake for 10 minutes.
Let set on the cookie sheet for am minute then remove to a cooling rack.
