Candy Corn Cupcakes

It seems like moms are scrambling to come up with last minute Halloween party treats for their kids to take to school for their parties. So I thought I would share a simple cupcake decorating idea that is "Halloweenish" and is super easy (no decorating tips required!)


Candy Corn Cupcakes

Cake:
1 box white cake mix
1 cup flour
1 cup sugar
3 eggs
1 teaspoon vanilla
1 1/3 cup water
1 cup sour cream

Preheat oven to 350°

Combine ingredients in a large mixing bowl and mix until no lumps remain.
Pour 1/4 cup of the batter into paper-lined muffin tins.
Bake for 15-18 minutes, or until toothpick inserted in center comes out clean.
Remove to a cooling rack; cool completely.

Frosting:
1 cup salted butter; softened
2 pounds powdered sugar
1/2 cup milk
1 teaspoon vanilla
Yellow food coloring
Orange food coloring

Cream all ingredients in a stand mixer until frosting becomes fluffy.
Separate frosting into 3 bowls.
You will need more for the yellow and orange than you need for the white.

Tint one bowl of frosting yellow and one orange, leave one white.
Using a piping bag, or ziploc baggie, snip the end off and fill the yellow frosting first.
Pipe a ring of frosting around the cupcake top.
Repeat with the orange, creating a smaller ring on top of the yellow.
Finally, with the white frosting, create a mound of frosting at the center of the orange and pull up to create the tip.

Top with a candy corn piece if you want!
