Roast Beef Grilled Cheese


Look at that gooey cheese, caramelized onions, and wonderful deli-sliced roast beef on grill sourdough bread.
Is your mouth watering yet?
If not, it should be.
It smells so good.
Really good.
My mouth is watering again while I'm typing this.
These dandy sandwiches were last night's dinner at our house.
I kept trying to come up with a side dish, and never got around to it. Turns out we didn't need anything else.
One filled me up, and one and half filled up the hubs! I couldn't believe he was full.
It is a super easy and satisfying sandwich to make. It is a little pricey, as the cost of roast beef and cheese is going up everyday it seems. But treat yourself. You'll be glad you did!
While you cook the remaining sandwiches, you may place on a foil-lined baking sheet in an oven heated to 200 to keep them warm.



Roast Beef Grilled Cheese

Cook Time: 7-8 min
Ingredients (4 sandwiches)
  • 1 onion, sliced into rings
  • 1 tbsp butter
  • 1 lb. deli-sliced roast beef
  • 8 slices sourdough bread
  • 1/2 cup butter
  • 10 slices pepper jack cheese
  • 10 slices colby cheese
Instructions
Using the 1/2 cup of butter, butter one side of each of the 8 slices of bread.
Heat the tablespoon of butter in a skillet and saute the onions until clear.
Scoot the onions to the side of the skillet.
Add 4-6 slices of roast beef to the open side of the skillet and let it heat until browned.
Flip once browned enough for you, to let the other side brown.
Meanwhile, heat a griddle and place a slice of bread, butter-side-down, on the griddle.
Place 2 slices of pepper jack cheese on the open side of the bread.
Add some of the sauteed onions over the cheese.
Place the stack of the roast beef over the onions.
Add two-and-a-half slices of the colby cheese and a half slice of the pepper jack cheese (just to make it extra cheesy).
Top with the other side of the bread, butter-side-out again.
Then flip the sandwich to brown the other side.
Repeat with remaining ingredients to make the rest of the sandwiches.

  1. Grilled meat feels so tasty to eat that I could not resist adding it in my menu for the weekend party. Since, I was to host the party, so I feeling excited to grill chicken with the help of a large size electric grill that was bought from TopElectricGriddles
