Peanut Butter Chocolate Cupcakes


I'm not really sure what to "name" these cupcakes.
At my house we call them "peanut butter cup cupcakes". But, really they are just chocolate cupcakes with DELICIOUS peanut butter frosting, and topped off with a wonderful peanut butter cup garnish.
This frosting is my favorite. I can eat it with a spoon. Literally. I do eat it with a spoon.
I decided to share this as cupcake #2 in my cupcake series, because honestly, who doesn't love peanut butter cups?
Truthfully, I am not a chocolate cake person. At all. And I will admit that I typically eat only the cupcake top with the frosting, which I pile on nice and high :) You could also fill these with the peanut butter frosting, or add a peanut butter cup to the batter in the cup. The ideas are coming to me too quickly!
Anyway, for today when I made these for the picture, I opted to use a chocolate cake mix from a box, and they came out just as delicious as from scratch. I was able to frost 15 cupcakes with this recipe. If you don't go as heavy as I do with the frosting, you will get more cupcakes frosted out of this recipe. The frosting is easy to double. Enjoy!


Peanut Butter Chocolate Cupcakes

1 box chocolate cake mix
1 cup milk
3/4 cup butter, melted
3 eggs

Frosting
1/2 cup butter, softened
1 cup creamy peanut butter
2 1/2 cups powdered sugar
3 tablespoons milk
Reese's Peanut Butter Cups

Preheat oven to 350
In a mixing bowl, combine the cake mix, milk, melted butter, and eggs.
Beat on high for two or three minutes until few clumps remain in the batter
Using a 1/4 cup measuring cup, scoop out the batter into prepared muffin tins.
Bake for 12-15 minutes.
Remove from the muffin tin to cooling racks to finish cooling.

In a stand mixer, or electric mixer, cream together the butter and peanut butter.
Add the powdered sugar slowly, incorporating it into the buttters.
Pour the milk slowly into the mixture until it reaches your desired consistency (soft peaks form)
Pipe onto cupcake, garnish with Peanut Butter Cup
